A mellow-flavoured Derby cheese layered with sage and topped with a further sprinkling of sage. A creamy traditional cheese with a subtle sage taste.

Sage is rubbed into the curds before pressing into moulds and maturing for around 9 months. It’s sweet and strong and for traditionalists everywhere. Based on an old-fashioned recipe. The layers of sage and the extra sprinkling on top give this unique cheese a distinctive and recognisable look.

History: The Fowler family invented Sage Derby in 1670 when it was initially only made for harvest and Christmas festivities. The family moved away from Derbyshire in 1898, and finally, this cheese returned home to Derbyshire. Sage Derby is a hard-pressed cheese with a firm, open and creamy texture, with a wonderful sage aroma from the fresh sage herb infused into the curd, producing a tasty, clean flavour. As an artisan handmade cheese, it has seasonal colour variations, and the sage will appear either layered centrally or fully blended.
