The Whole Blue Stilton: A Taste of History
Meet the ‘King of Cheese’: the complete 8kg, rind-on Blue Stilton wheel. This is the very same cheese, full of provenance and flavour, from which all our cuts are sourced.
This rich, intensely creamy Stilton is handmade using the original recipe established at the Hartington Creamery on April 1st, 1900. It is crafted under the precise supervision of our Master Stilton maker, Diana Alcock—the only female licensed to hold this title in Britain.
Matured for 4–6 weeks, the cheese is then pierced to allow the blue veining to flourish, creating its signature texture and taste. The whole wheel benefits significantly from remaining uncut, extending its life. This 8kg cheese will last up to 30 days before being cut. Any excess cheese can be sliced, wrapped, and stored in the freezer for future enjoyment.
The original Hartington Creamery was established in the 1870s by the Duke of Devonshire and the Chatsworth Estate.
