This very creamy blue cheese is matured for approximately 10 weeks in carefully controlled conditions and is made with local pasteurised Derbyshire milk. The cheese has won numerous awards at the Bakewell Show and the British Cheese Awards. It has a slightly yellow colouring to the cheese and a very mellow flavour.

This creamy, crumbly, slightly salty white cheese is similar to a good Cheshire or White Stilton and has also been likened to Feta. Matured for only 2 weeks it is a young, fresh, clean cheese suitable for vegetarians made with pasteurised local Derbyshire milk.
